Text Box: What is Brining?

Brining is simply placing a piece of meat in salt water solution.  What occurs is called osmosis.  Meats naturally contain salt and  water.  By placing meat in a higher concentration of salt water, the meat will want to create a balance of salinity.  It does this by pulling the water in and pushing it back out until the salinity between the meat and water are balanced.  This pulls the flavors and moisture of the brine deep inside the meat evenly, unlike a marinade, injector or dry rub.  If the salinity content is not high enough, osmosis will not occur and you will only be soaking in flavored salt water.  For a stronger flavor use less water.
