What is the difference between brining, marinating, and injecting?


Marinating only allows the flavors to penetrate a small amount into the meat.  Injecting only places the seasoning in pockets where you injected and does not evenly distribute the flavor.  Injecting also creates holes in the meat, allowing moisture to escape while it cooks, leaving you with a dry piece of meat.  Brining places seasonings, deep and evenly throughout the meat while adding moisture.  Brining makes meat juicier, more tender, and flavorful.

Do I need to season the outside of the meat?


No, the outside of the meat will already be seasoned.  But, if you do, we suggest using a salt-free seasoning

Can I use the brine mixture more than once?


We do not suggest using the brine mix more than once.  Food born illness can be a problem with raw poultry.

How does brining season the meat on the inside?


The process is called osmosis.  Meats naturally contain salt and water.  By placing meat in a higher concentration of salt water, the meat will begin to create a balance of salinity by pulling the water in and pushing it back out until the salinity between the meat and the water is balanced.  This allows the flavors and moisture of the brine to penetrate deep inside the meat evenly.

I ran out of brine seasoning.  Where can I find more?


Bird-Brine mixes are available at the store where you bought your kit.

I ran out of bags.  Is it safe to put the meat directly into the container?


Yes, the containers in your kits are food grade plastic and are safe to brine in.  However, the bags do have a purpose.  The bags keep the meat completely surrounded by the brine and also make for easy cleanup.

Do I need to season the outside with a rub or inject seasoning?


DO NOT INJECT!  The meat is already seasoned.  Injecting only makes holes in the meat where moisture escapes causing the meat to taste dry.  If you would like to rub a dry seasoning on the meat, use a salt-free seasoning.

Can I over Brine?


Yes you can.  However, by following the chart provided in the instructions you should not have any problems.
