Gravlax

 

 Ingredients:

 

Salmon fillets

Lemon Pepper w/Dill Brine

Classic Brine

Olive Oil

Brandy

Cheese Cloth

 

Combine 1/4 cup of each brine seasoning.  Place the salmon, skin side down, on the cheesecloth.  Brush the salmon with brandy and olive oil.  Spread the brine seasoning over the salmon, approximately 1/8” thick.  Wrap tightly and place in a pan.  Refrigerate for 1 1/2 to 2 days.  Rinse and slice thin. Excellent as a appetizer or entrée.
